A lighter take on traditional lasagna, made with rice paper layers, rich beef tomato sauce, and a creamy cheese filling.

① Sauté onion, mushrooms, and garlic until fragrant. Add ground beef and cook until browned.
② Stir in passata and soy sauce. Simmer until the sauce thickens.
③ Combine silken tofu, Greek yogurt, and half of the mozzarella to create a creamy filling.
④ Briefly dip each rice paper sheet in warm water for 1–2 seconds.
⑤ Layer rice paper, meat sauce, and creamy filling in a small baking dish.
⑥ Repeat the layers, then top with the remaining mozzarella and a spoonful of meat sauce.
⑦ Bake or air fry until the cheese is melted and lightly golden.
