Baked Beef Jerky

Spiced beef strips marinated with ginger, scallions and savory seasonings, baked until chewy, then tossed with cumin, chili and sesame for a bold, aromatic finish.

Beef, cut into long strips
Fresh ginger
Scallions
Cooking wine
Sichuan peppercorns
Cumin powder
Chinese five-spice powder
Chili powder
White sesame seeds
Light soy sauce
Oyster sauce
Cooking oil
Cumin seeds, for finishing

01 Pat the beef dry with kitchen paper.
02 Cut the beef into long, evenly sized strips.
03 Smash or roughly slice the fresh ginger and prepare the scallions.
04 Place the beef strips in a large mixing bowl. Add the ginger and scallions.
05 Add cooking wine, Sichuan peppercorns, cumin powder, Chinese five-spice powder, chili powder and white sesame seeds.
06 Add light soy sauce and oyster sauce.
07 Massage and mix the beef thoroughly until every strip is evenly coated with the marinade.
08 Marinate the beef for 2 hours.
09 Drape the marinated beef strips individually over a wire rack, leaving space between the pieces.
10 Place the rack in the TJean UBaker S1 22L. Select Bake mode and set both the upper and lower temperatures to 180°C. Bake for 30 minutes.
11 Remove the baked beef strips from the oven and transfer them to a plate.
12 Heat a small amount of cooking oil in a pan.
13 Add cumin seeds, chili powder and white sesame seeds to the pan.
14 Add the baked beef jerky and toss until it is evenly coated with the spices.
15 Transfer to a serving plate and serve after cooling slightly.
