① Finely chop lemongrass, shallots, and garlic. Mix with soy sauce, fish sauce, oyster sauce, and palm sugar.
② Marinate the chicken leg for at least 2 hours, or overnight for deeper flavor.
③ Place the chicken skin-side up in the air fryer basket.
④ Air fry at 190°C for 18 minutes until the skin is golden brown and crispy.
⑤ Meanwhile, prepare the dipping sauce by simmering water, sugar, and fish sauce until lightly bubbling. Let cool slightly.
⑥ Stir in lime juice, minced garlic, and bird's eye chili.
⑦ Serve the chicken hot with the dipping sauce on the side.
